Potato Salad

This is more of a "how I do this", than a recipe, because I really don't have one.  But, with the 4th of July coming up, I thought I'd share my potato salad "recipe" with you.  It's a must have for family gatherings, and one of my husband's favorites.  I never really thought it was anything special, it was just potato salad- I guess because I grew up eating it.  I didn't even know there was another way to make potato salad for a long time !  Now I know there are many- and I like most of them!                                                             

OK Here goes:

 

5 lbs potatoes

Mustard

Mayo

Dill pickles, diced

Onion, diced

eggs, 6 or so- boiled and chopped

Salt and Pepper to taste

Fresh or dried dill, optional

 

Peel potatoes, cut into chunks and boil until tender.  Drain potatoes and put in a large bowl.  While potatoes are cooking, boil eggs, dice up some dill pickles and an onion. 

When potatoes have cooled a bit, mix in pickles, onion, eggs and lots of mustard and mayo.  I use a Lot of mustard and then add enough mayo to make it creamy and good.  Add a bit of salt, pepper (I don't always add pepper), and some dill (this is also optional).  I like the potato salad while it's warm, but traditionally it's served cold in our family.  Enjoy!
