Crust Less Quiche

 From the Heart of The Urban Homemaker newsletter. 

 Sounds really good- I think I'll make it for dinner tomorrow night and toss in some of the veggies from our CSA pick-up. 

 


CRUST LESS QUICHE

This extra fast recipe takes about 10 minutes prep time and is a great way to use leftover meats and vegetables, and eggs which are not only low cost and high quality protein, but plentiful during this time of year. Makes 4-6 servings.

4 eggs
1-2 Cups cooked or uncooked chopped veggies, such as onions, mushrooms, asparagus, chopped broccoli, red or green bell pepper, or spinach
1-2 Cups chopped leftover meat such as chicken, beef, or ham
1/2-1 Cup shredded cheese
1/4 Cup flour
salt and pepper to taste

Grease a pie pan (deep dish is best) and preheat the oven to 350 degrees. Assemble the veggie
ingredients into the pie pan. Sprinkle the cheese and meat over top the vegetables.
Whisk up the eggs with the flour, and salt and pepper if desired. (If using ham, reduce the salt)
Pour the egg mixture over the vegetable/meat mixture. Bake for 25-30 minutes until the mixture is puffy, and lightly browned. Double or triple if you have a large crowd.

Serve with fresh fruit and homemade muffins.
