Today's Kitchen Adventure...Skillet Granola
I stirred this breakfast treat up in a matter of minutes. We love granola, but lately it has been a bit too HOT to turn the oven on, and I've not taken the time to try this out in the dehydrator. Here's my no-measure, toss it in and go method: Simple Skillet Granola . Put the following into a skillet over medium heat: 2 tbl or so butter (you may want more, see note below) about 1/4 cup honey (this makes a very lightly sweetend granola- add more if you want it sweeter) Stir until butter melts. Then add in: 3 handfuls old-fashioned oats 1/4 cup or so of wheat bran (optional) 1 tsp. vanilla flavoring a sprinkle of ground cinnamon (if desired) Note: If mixture seems too dry and your honey and flavorings aren't mixing in to all the oats, you can add a little more melted butter or just a very small amount of hot water. Cook and stir until lightly browned. Add your choice of the following and cook and stir for just a few more minutes: 1/3 cup or so of each: sliced almonds walnuts (or other nuts) dried unsweetened coconut Remove from heat and spread onto baking sheet to cool. Add your choice of dried fruits, if desired. I served ours right out of the pan, not waiting for it to cool. I put what little was left away for topping yogurt later!
