It is too hot to do much cooking or even want anything remotely warm to eat right now, so we've been eating lots of salads, sandwiches, and other no-cook dishes. I needed to make lunch the other day and wanted more than the standard chicken salad sandwich. I also wanted something that the little girls would eat, so I wouldn't be hearing, "I'm hungry!" in an hour. OK, yes, I still heard it; but I knew they had just eaten, and I could make them wait for snacktime without feeling guilty They will eat anything sweet, so I decided to add some fruit to the chicken salad to make it more appetizing to them. It turned out pretty good, and 2 of the 3 girls ate it happily. The littlest Love prefers peanut butter and honey to chicken salad or other sandwich these days...and that's OK, we use all-natural peanut butter and raw honey, so she's getting good nutrition, too If you need something cool to eat on a hot day... Here's my latest Kitchen Adventure: Sweet Summertime Chicken Salad 1 cooked chicken breast, diced 1 small apple, peeled and chopped 1/3 cup green grapes, quartered 1 sweet banana pepper, sliced into rings 1/4 cup walnuts, chopped Pineapple Sage & Lemon Thyme- a few leaves of sage and a small sprig of thyme, finely chopped Lime juice- just a squeeze, or to taste Mayonnaise- just enough to moisten Mix chicken, apple, grapes, pepper, and walnuts together. Add chopped herbs, a squeeze of lime, and mayonnaise. Stir to combine. Serve on flatbreads or with crackers; or put it in an edible container such as a hollowed out sweet pepper- a red or orange bell pepper would be especially nice. Notes: I used a leftover fried chicken breast that I removed the skin from; baked or grilled chicken would work, too. Amounts for grapes and walnuts are approximate, as I just mixed this up and didn’t measure. Eyeball it, and make it to your liking. For grown-up palates, some sliced green onion and a bit of white pepper would spice things up a bit, and a sprinkle of paprika would be nice, too. This was just enough to make pita wraps for myself and 3 little girls, so double the recipe if you are feeding a larger group. Enjoy! |
