I made these for dinner tonight, and sent half to friends. These can be ready for dinner in an hour, or if you're not in a hurry you can lengthen the rising time a bit. Either way, they are delicious! 4 1/2 tsp yeast 1/2 cup warm water 2 tablespoons butter 1 1/2 tablespoons honey 1 1/4 cups milk 1 1/2 teaspoons salt 4 1/2 - 5 cups flour - I used 1 1/2 cups organic whole grain pastry flour and 4 cups organic unbleached all-purpose flour, because that's what I had on hand. You can vary the flours to suit your taste. Combine yeast and warm water; let stand 5 minutes. Put butter, honey, milk, and salt into a large microwaveable bowl and heat just until warm and butter begins to melt. Let cool if it gets too hot. Stir in yeast mixture. Gradually stir in enough flour to make a soft dough. Knead on a floured surface about 5 minutes, or until smooth and elastic. Put in an oiled bowl and cover. Let rise 15 minutes (20-30 if you have more time) Divide dough in half and divide each half into 12 balls. Place 12 rolls each in two greased 9-inch pans. Cover and let rise 15 minutes (again, you can wait 20-30 if you're not in a hurry) Bake at 425 for 10-12 minutes. Rub tops of rolls with butter, if desired. Makes 2 dozen rolls Enjoy! |
