Polenta & Greens

I made this for dinner last night.  Didn't have a recipe, so I just sort of guessed and tossed and cooked.  Turned out good last night- sometimes it doesn't turn out so good !

 

OK, here's the "recipe" if you can call it that...

 

Polenta and Greens

 

1 tube plain Polenta

Pasta sauce- I had some pizza sauce in the freezer that I thawed and used

Cheese- I had a bit of Mozzarella- parmesan for next time, though

1 bunch of greens- These were baby collard greens- chard or spinach would be good, too.

4 baby leeks- green onions or even some chives would work

bacon- optional

 

Slice polenta, brush with olive oil, place on baking sheet.  Bake at 400 degrees, about 20 minutes or until slightly browned.  Turn about halfway through cooking.  You can saute on the stovetop, if desired. 

If using the bacon, dice it up and cook.  Remove from pan and drain excess grease.  Use the pan and a little reserved bacon grease to saute the greens and leeks.  If you don't eat bacon- just saute the greens and leeks in a bit of olive oil.

Season the greens with sea salt and fresh ground pepper when done. 

Heat pasta sauce.

 

To serve.  Place polenta slices on plate, spoon on a bit of pasta sauce, top with greens, and a bit of the bacon and cheese.  We had this with a huge salad and  Dill Cucumber Soup.
