     The weekend is almost here, isn't it?  Yea!!! 

 

Today is the National Day of Prayer- so I'm planning on spending some "extra" time today in prayer for our nation.  We definitely need to be praying for our country... 

 

I will also be in the kitchen today, trying to decide what to do with this week's share of veggies from the CSA.  Lots o' greens!  Good for you, that's for sure- now, what to do with all that green??? 

Here's what I got this week:

 

Lettuce- salads of course

Kale???  What does one do with kale?  It makes a terrible smoothie !

Collard Greens- hey, I'm from TX, I know what to do with these greens .

Turnips w/greens- same, same, same- I can cook these.  Don't really like them, but dh and dd #1 do.  I'll eat the turnips raw!

Broccoli-mmmmmmm, no problem!

3 beets???  beet salad, perhaps???  I've only had pickled beets.....

Radishes- into the salads!

Scallions- into just about everything!

Dill- hanging to dry

Hi Catherine,

We like our kale just steamed in a tiny bit of water and served with butter. You can also saute some chopped onion and garlic in a little olive oil, then add the kale and continue cooking for about 3-4 minutes. I make spinach the same way and it's really good You can also saute mushrooms with the garlic and onions.
Or make Potato-Kale soup, yummy!
Beet greens can be cooked the same way, or added raw to salad. I cook my beets, but then like them cold for eating.

Don't know about Kale, but Beets I do! They are a staple here in our house. Mostly I chop them up raw to put into salads. I adore them in salads.

You can also lacto-ferment them by the method from Nourishing Traditions. Do you have that book? If not it's one you will definately want to add to your healthy eating library!

Congrats on all the yummies! You are doing such a great job keeping your family healthy :)
