Cold Dill Soup
This recipe is from this week's
World Hunger Relief CSA Newsletter:
Cold Dill Soup
1 pint half and half
2 (8oz.) cartons plain yogurt
2 cucumbers, peeled and diced
3 tbsp. fresh dill
2 tbsp. lemon juice
1 tbsp. chopped green onion
1/2 tsp. salt
1/4 tsp. pepper
Sliced cucumber and sprigs of fresh dill for garnish
Combine ingredients, stir well, and chill thoroughly. Serve with cucumber and dill garnish. Enjoy on a warm day!
Sounds really good to me, though I'm not sure the rest of my family would agree . If they don't like it, at least I'll have yummy lunches for a while. I think I may substitute some skim milk for part of the half-in-half, too.

My son will love this one! I (well into retirement) have just "discovered" cucumbers. Just never cared for them - however, recently have been buying them and adding to my salads. Now, am wondering why it has taken me so long to "discover" them. Thanks for the recipe. Barb
