Homemade Cream of Chicken Soup

1 1/2 cups chicken broth
1/2 teaspoon poultry seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
1/4 teaspoon salt (or less; taste to test)
1/4 teaspoon parsley
dash of paprika
1 1/2 cups milk
3/4 cup flour

1. In medium-sized saucepan, boil chicken broth, 1/2 cup of the milk, and the seasonings for a minute or two (longer if using fresh onions or garlic).

2. In a bowl, whisk together the remaining 1 cup of milk and flour. Add to boiling mixture and continue whisking briskly until mixture boils and thickens.

Yield: 3 cups (about 2 cans)

it looks kind of like mine, but mine is a dry make-ahead mix that I cook up like a roux sauce when I need it. I will try to get it posted soon.

I love cream of chicken soup, but I rarely get it. It never occurred to me to make it myself!

Not only does it have PPO, but a lot of the canned soups have MSG in it- which is known to be not so great for you!
Here is a great substitution recipe I have for making your own powder mix to add water to for Cream of Mushroom soup and Cream of Chicken soup.
2 cups nonfat dry milk powder
3/4 cups cornstarch /or/ 1/2 cup arrowroot /or/ 1 1/2 cups wheat flour
1/4 cup chicken bullion
1 Tbsp dehydrated onion
1/2 Tbsp garlic powder
1/2 cup mushroom powder for cream of mushroom soup mix- purchase dehydrated mushrooms from Costco & grind in coffee grinder.
seasoning:
for Cream of mushroom I use 1/2 tsp allspice, 1/2 tsp thyme, 1/2 tsp celery powder, salt & pepper
for Cream of chicken I use 1/2 tsp celery powder, 1/2 tsp carrot powder, 1/2 tsp parsley, 1 bay leaf-ground, 1/2 thyme, salt & pepper.
You can make the celery & carrot powder by grinding up dehydrated in your coffee grinder.

* use 1/3 cup of this mix with 1 1/4 cups water and 1/4 cups oil to make the equivalent of one can of soup.
