Coconut Curry Chicken
This recipe is so quick and easy and VERY tasty!
2 lbs. Boneless, Skinless Chicken Thighs, cut in pieces
4 Potatoes, cubed
4 Tblsp. Oil
1 1/2 Green Bell Pepper, chopped
1 Medium Onion, chopped
1 Can Coconut Milk
1 Pkg, (5 Tblsp.) Curry Sauce Mix
1 Tsp. Salt
2 Cups Water
2 Tsp. Cornstarch
Cook cubed potatoes in microwave until soft, about 8 - 10 minutes. In a large skillet, heat oil and cook chicken until brown, add green peppers and onions and cook until soft, about 5 minutes. Stir in potatoes, coconut milk, curry sauce, salt and 1 1/2 cups water. Mix other 1/2 cup water with the cornstarch and stir into skillet. Simmer 15 - 20 minutes.
Serve over rice. Enjoy!
