EASY and TASTY! This is one of my families favorite meals. Even the kids love it!
Boneless Skinless Chicken Thighs, cut into chunks (I use about 8 for our family of 5)
1 can chicken stock
1 can coconut milk
1 box Golden Curry (found in the ethnic food section)
1 large bag of your favorite frozen veggies (I usually use a mix)
Put it all in the crock-pot and cook until chicken is done, you need to stir it a few times during cooking so the curry will dissolve. Serve with rice.
