Butter-Crunch Pumpkin Bars

Here is a recipe I found I one of my favorite blogs:

Warm Pie Happy Home

 

15 oz can pumpkin

12 oz can evaporated milk

3 large eggs

1 1/2 cups sugar

1 tsp cinnamon

1/2 tsp salt

TOPPING:

1 pkg yellow cake mix (Duncan Hines Butter Golden)

1 cup chopped pecans

1 cup melted butter

serve with fresh whipped cream....yumm

Mix pumpkin, evaporated milk, eggs, sugar, cinnamon and salt until creamy.   Pour into greased 13x9 pan.  Sprinkle on dry cake mix and pecans then drizzle on melted butter.  Bake at 350 degrees for 50 minutes.  Serve with a dollop of whipped cream....yumm

is this something I could make up and take pieces to neighbors? Let me know, please :) Cuz this looks really yummy, and I do NOT want to eat the whole thing myself.... hehehe LOL!!!!


oh - I went to her website from which you linked, and it looks like they are solid enough to cut into bars and share around. Perfect. We will make it tomorrow!

update - I made this the other day and it set up into bars just fine. I did cook it an extra 5 minutes. I also used "pumpkin water (see my latest rant about canning pumpkin) and powdered milk to make the evaporated milk, and I think I used too much water, but it still set up just fine.
