Carne Guisada
This is a yummy slow cooker meal:
2 tablespoons cooking oil
2 pounds pork stew meat
1 (15 ounce) can tomato sauce
1 (10.5 ounce) can beef broth
1/2 cup water
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon black pepper
salt to taste
2 jalapeno chile peppers, seeded and chopped
(you can also add a can of Hominy if you wish)
Heat oil in a large frying pan over medium high heat. Cook pork until evenly brown. Pour off excess fat. Add to slow cooker and stir in tomato sauce, beef broth and water. Season with garlic, chili powder, cumin, black pepper, salt and jalapeno peppers. Cover and cook on low for 6-8 hours.
Dissolve cornstarch in a small amount of water, and stir into simmering stew until thickened, about 5 minutes. Serve with chopped onion and cilantro, lime wedges, and warm corn or flour tortillas.

This sounds good, but my husband doesn't like pork. I wonder how to change this with beef, hmmm. I'm all into my crockpot. Have you checked out www.crockpot365.blogspot.com? It's really cool.
Blessings,

****You can just use beef stew meat also. I know, I love using my crockpot too! I will check out the blog, thanks! Cindee****
