Blasted Chicken
No, I'm not mad at my chickens - hehe (since I STILL don't have any!) Just thought I would share one of my favorites ways to roast a chicken - easy and so moist. I roasted a chicken on Monday and we've had several meals with it and I'm about ready to put the bones in a pot to make a broth which will turn into chicken and dumplings or a soup.
Blasted Chicken
3 1/2 lb. chicken
olive oil
salt and pepper
Preheat oven to 450 degrees. Rub a little olive oil on the chicken, season with salt and pepper (and any other seasonings you like). Place in roasting pan and bake for 45 minutes or until juices run clear. Let sit for at least 15 minutes before cutting - this is most important!

Oriental Ramen Salad
With the weather warming up I thought I would share a recipe we enjoy! Make a lot as it is addicting!
Oriental Ramen Salad
- 2 tablespoons butter or margarine
1 (3-ounce) package oriental-flavor ramen noodle soup, seasoning packet reserved
1/2 cup sliced almonds
2/3 cup evaporated milk
2/3 cup vegetable oil
3 tablespoons white vinegar
2 tablespoons granulated sugar
2 (10-ounce) packages romaine-radicchio
- Melt butter in large skillet. Crumble ramen noodles and add to skillet with almonds; cook, stirring constantly, until noodles are golden. Remove from pan; cool.
- Place evaporated milk, oil, ramen seasoning packet, vinegar and sugar in blender; cover. Blend until smooth. (I don't use the blender...just shake in a jar.)
- Combine salad greens, noodle mixture, green onions and dressing in large bowl; toss to coat well. Serve immediately.
Makes 8 servings.
To make this a meal, add cooked sliced chicken and drained mandarin oranges.

Bread and Rolls
Ahhhhhhhhhhh bread baking makes the kitchen smell so wonderful! Funny thing....I see some rolls missing already....

The sun is shining so with luck I may get some of my flower pots planted this afternoon!

Crock pot Spanish Chicken
Tried a new recipe today and it's pretty good! Oh how I love the crock pot!
3 - 4 pound chicken, cut up (I used a bag of chicken tenders)
salt, pepper, paprika, garlic powder to taste
6 oz. can tomato paste
1/2 can beer (or you can use chicken broth)
1 small jar stuffed green olives with liquid (about 3/4 cup)
Season the chicken and place in crock pot. Mix tomato paste and beer together and pour over chicken. Pour jar of olives and liquid over the chicken. Cover and cook on low 7 - 9 hours. I was in a hurry so I cooked it on high 5 hours. Serve over buttered egg noodles or rice.
