Blasted Chicken
No, I'm not mad at my chickens - hehe (since I STILL don't have any!) Just thought I would share one of my favorites ways to roast a chicken - easy and so moist. I roasted a chicken on Monday and we've had several meals with it and I'm about ready to put the bones in a pot to make a broth which will turn into chicken and dumplings or a soup.
Blasted Chicken
3 1/2 lb. chicken
olive oil
salt and pepper
Preheat oven to 450 degrees. Rub a little olive oil on the chicken, season with salt and pepper (and any other seasonings you like). Place in roasting pan and bake for 45 minutes or until juices run clear. Let sit for at least 15 minutes before cutting - this is most important!

This is probably one of my favorite things to cook because you can make so much with just one whole chicken. With a family of 6, with one on the way, I love frugal cuts of meat. Try sticking 1/2 lemon inside....it makes it even more delicious. :) I like rosemary with roasted chicken too.
