Those crazy food prices and make ahead dinners!
I can't believe the increase of prices at the grocery store in the last couple of months. We are doing fine, but now I need to be even more diligent in buying larger quantities when things are on sale to avoid paying regular price. Have you heard of those places where you pay (huge prices in my opinion) for a number of dinners that you assemble yourself at their establishment? Why can't we do that for ourselves? So with that in mind I thought I would start sharing some recipes that you can put together yourself and put in the freezer. I prefer the ones that you don't cook ahead of time - I think they taste better..but I do have some of those as well.
Concentrating on poultry recipes first - buy chicken breasts on sale...the first set of ingredients are for one meal and the second will be X3 so you can make in bulk and put in the freezer.
Cranberry Chicken (we've tried this and my husband loved it)
8 oz Catalina Dressing 24 oz Catalina Dressing
1 pkg. dry onion soup mix 3 pkgs. dry onion soup mix
1 1 lb. can whole berry cranberry sauce 3 cans cranberry sauce
4 boneless chicken breasts 12 boneless chicken breasts
Recipe yields 4 servings each
Mix together dressing, onion soup mix and cranberry sauce. Place chicken and mixture together in a freezer bag. Put in another freezer bag and put in freezer.
Serving Day
Thaw completely, place chicken with cranberry sauce in a greased baking dish and bake uncovered at 350 degrees for 1 - 1 1/2 hours.

I do this a lot - lasagnes, chicken rolls (cordon bleu, kiev, bacon-feta, etc) chicken korma... beef stroganoff
mostly it is a "I am making this for dinner today, so I will just make a TON now and freeze in meal portions for later.....

What is Catalina Dressing?
Do we not have it this side of the Atlantic, do we call it something else, or do we yes have it and I have just not been paying attention?
