Menu for the next 2 weeks

In all fairness, I wanted to share that I'm using the premade menus, recipes and shopping list from The Family Homestead, so I can't take credit for putting all this together. Check it out, her site is in my links,  her menus are wonderful, and reasonably priced. All the meals are made from scratch and yummy!

Day 1-Crockpot Pizza Casserole, garlic toast, salad

Day 2-Homemade "hamburger helper", muffins, salad

Day 3-Black bean spaghetti, french bread, veggie tray

Day 4-Creamed tuna on toastpoints, salad

Day 5-Salisbury steak, brown rice pilaf, broccolli salad

Day 6-Chinese pork over brown rice, salad

Day 7-Chicken Broccolli bake, garlic roasted potatos

Day 8-Crab Alfredo over whole wheat pasta, cooked peas, muffins

Day 9-Mexican Fiesta

Day 10-Baked Garlic Parmesan chicken legs, baked potatos, coleslaw

Day 11-Pork steak and veggies in crockpot, brown rice, muffins, carrot sticks

Day 12-Crockpot enchilada, tortilla chips, green beans

Day 13-Creamy Broccolli soup, muffins, fruit salad

Day 14-Homemade "hamburger helper", muffins, carrot sticks and ranch

For breakfast, we have...                          For lunch we have...

oatmeal                                                   leftovers

granola                                                   mac n cheese

eggs, toast, bacon                                    sandwiches

breakfast burritos                                  bean burritos

french toast, bacon

This weekend I will make several things ahead of time. I will make....

~Oatmeal Mix                                   ~granola

~Bread                                             ~tortillas

~muffin mix                                      ~bean burritos*

*I make a huge batch of bean burritos to freeze. All I do is cook up a big pot of pinto beans, about  6 cups of them. Then when they're done, I take my cast iron frying pan, and melt about 1 stick of margarine or butter and add the beans and a little of the liquid, and with my potato masher I mash them all up and fry them up a bit. Then add what all I want to....usually some salsa and cheese and maybe some jalopenos in some of them and a little seasoning. They are yummy and freeze really well.
