Sara's Super Simple Sugar Free Apple Butter

Here is the recipe that I promised. I have a lot of diabetics and people who are on low or no sugar diets that I like to give gifts to during the holidays. So this is one of the favorites around here, even for the sugar eaters. All you need to make it is a 4 quart crock pot, a food processor, and a little time.

Sara's Super Simple Sugar Free Apple Butter

9lbs apples

4-5 cinnamon sticks

1. Peel, core, and slice your apples. This can take some time, but let me tell you, with a few tools, you can get it done really fast. This year I found this little gadget. It's made by starfrit. It's an apple peeler...a cousin to the rotato, but made just for peeling apples and it works wonderfully. I got it for less than 10 dollars at walmart. This along with the corer/slicer tool got the job done for me in less than 30 minutes.

2. Fill your crockpot with your apples. ( If you happen to have a smaller crockpot, just fill it up and add only 3-4 cinnamon sticks.) I fill it up until the lid just barely fits on. The apples will cook down a bit.

3. Turn your crockpot on low and cook for 3 hours with the lid on, stirring occasionally.

4. After 3 hours, take the lid off and cook for an additional 8 hours with the lid off, or until the liquid is cooked out, stirring occasionally. The apples will cook down quite a lot and brown.

5. After the apple butter has cooked down and browned, you will need to mash it or run it through a food processor.

6. I was able to fill 6-8oz jars with a little leftover for a snack for the kids. Make sure you boil your jars first then fill them with warm apple butter and process in a water bath for 10 minutes.

Oh Sara, thank you for this recipe! Our local apple orchard, where we have purchased s.f. appple butter this summer, is now closed, and we have very little purchased left. Now we can make our own! Thank you!
