Happy Valentine's Day and an updateWell first off, I wanted to tell everyone Happy Valentine's Day!!! And I also wanted to thank all of those who have been praying for my family and I. As of right now, we are still feeling pretty yucky. My oldest is home throwing up today and my youngest has got a runny nose that just won't quit. My throat is still throbbing, but the medicine I have been taking, Tylenol Sore Throat, has been helping, and I think it may have something to give me a little energy. That along with all the vitamins that I can think of and a cup of hot tea a couple times a day has really helped. I've been trying to make the best of today and decided that even though we are all feeling really bad, we will still have us a nice "formal" dinner. I've got a pretty plastic lacy tablecloth and some candles. For dinner I've got a big pot roast in the crock pot with some vegetables and we'll have some mashed potatos, salad and homemade bread. Then I'm fixing to bake a heart shaped strawberry cake for desert. While I'm here I'll share with you how I make my pot roast last through 3 different meals 1st Night~We have the pot roast with a few vegetables, mashed potatos and usually a salad. I buy a 3-4lb roast, which is just right for us(a family of 5), I also buy the McCormick seasoning packets for Beef Stew. In my crock pot I put some carrots, maybe some potatos, usually whatever I have in the fridge, then my roast, then the seasoning packets, and then water up to about 2 inches below the edge. I usually don't cover the roast because when the juices from the roast start filling the pot, it will overflow. I cook it on high for about an hour or so and then on low for the rest of the day. I also make a huge deal of mashed potatos, enough for plenty of leftovers. 2nd Night~The second night I shred the leftover meat up, add a bag of frozen mixed vegetables and fill the pot back up with water to the top and we have stew, and I usually make cornbread with it. 3rd Night~The third night I take whatevers leftover, which is the stew with the vegetables and the mashed potatos. I strain most of the liquid off the stew and put the veggies and meat in baking dish and layer the mashed potatos on top and some shredded cheese and cook in the oven at 350* for however long I think, about 30 to 45 minutes and we have Shepard's Pie. By the time we get to the third night, my family is pretty sick of pot roast, but we usually only do this about once a month and usually only in the colder months. Although you usually have to put out a big amount for a good roast 10-12 dollars, it makes it worth it when it last us through three meals. Well, I'm off to go bake a cake.
